                     Jessica Pitkoff – Principal

Dear Fox Hollow Families, Students, and Staff, 

I am very humbled and honored to introduce myself as the Principal of Fox Hollow Elementary. I have been dedicated to the field of education for 15 years. I have had the privilege to work at many Pasco County Schools supporting the needs of students ranging from Pre-K to High School. My most recent administrative experience was at Anclote Elementary as their Assistant Principal. I am excited and eager to bring my skill as an educational leader to Fox Hollow. 

Along with the teacher and staff, I will work hard to continue the legacy of success established by FHES by building strong relationships with teachers, parents, students, and community partners. We will continue to focus on building strong leaders, using data to drive instruction and to provide consistent implementation of the curriculum in a rigorous manner so we can continue to increase all students’ achievement.  

In addition to my role as an educator, I am first and foremost a wife and mother. My husband, daughter and I were born and raised in Pasco County and graduated from River Ridge High School. We love spending time in the great outdoors and being with family and friends. My daughter Eva is a flight attendant, my husband and I are empty nesters!  

As your principal, it is important to me that everyone who steps through our doors: teachers, students and parents, is excited to be here! This attitude enables us to meet the challenges of academic excellence in a positive, fun, and nurturing environment. My door is always open, and I welcome your input.

               Janice Cook – Assistant Principal

I am thrilled to be here and to have the opportunity to introduce myself as your new assistant principal.

Before moving to Pasco County, I worked in Lee County for 9 years. Prior to that, I taught in both Indiana and Nevada. My journey in this field began as a classroom teacher, but I have since taken on various roles such as an instructional leader, curriculum specialist, behavior specialist, and literacy coach. This allowed me to gain a diverse perspective on education.

I am also a proud parent. My son and daughter-in-law reside in Land O’Lakes. My son is a Navy veteran and currently works for USAA insurance while completing his bachelor’s degree in marketing. My daughter-in-law serves as the director of two substance abuse clinics in Tampa. And of course, I cannot forget to mention my sweet grand dog, who always makes me smile. During my free time, I love spending time outdoors, spending time with family and friends, playing games, and I am a Disney enthusiast who loves spending time at “the happiest place on earth”.

Education has always been my passion, and I firmly believe in helping others reach their goals. I consider families to be crucial in the progress of our school. I am excited about building strong relationships with our families, staff, and students. Together, we can create a nurturing and empowering environment that fosters growth, learning, and success.

I am so excited to begin this new chapter in my educational journey.  I look forward to this adventure and making a difference in the lives of our students.
